Can I edit my guest's response and refund them from RSVPify?
One of my guests just reached out to let me know they're not coming. I'd rather not delete them from the list. Is there a way to change their response to 'not attending' and then refund their payment without having to do it through Stripe?

Of course, you are welcome to change your guests' responses on their behalf and issue a refund for the purchase done through your event from your Dashboard>Overview.
To change your guests' response, go to Dahboard>Overview and click on the guest name to locate the "Edit" option. Once you've done that, you can change their response from "Attending" to "Not attending".
